They say the way to someone’s heart is through food. And Iloilo makes a pretty good case for that.<\/p>\n\n\n\n

Food has always been personal to me. After years in professional kitchens, I know how much of yourself can go into a good meal. So when a city feeds me in a way that stays with me, I take that seriously.<\/p>\n\n\n\n

Four trips in, Iloilo still gets me. And if I’m being honest, the food is a big reason why I keep wanting to go back.<\/p>\n\n\n\n

So now that WordCamp Philippines 2026<\/a> is bringing us to Iloilo City, I already know food has to be part of the story. Yes, we’ll have talks to catch and people to meet. But while we’re in Iloilo, please save room for a good Ilonggo meal. \ud83d\ude0b<\/p>\n\n\n\n

I’m clearly not the only one who thinks Iloilo food is worth paying attention to. Iloilo is the first UNESCO Creative City of Gastronomy<\/strong> in the Philippines. Eat around the city a little, and you’ll understand why.<\/p>\n\n\n\n

Iloilo has more to taste than I can possibly fit here. But if it’s your first time visiting, you can start here.<\/p>\n\n\n\n

Start with La Paz Batchoy<\/strong><\/h2>\n\n\n\n
\n<\/div>\n<\/div>\n\n\n\n

La Paz Batchoy is probably the first dish people will tell you to try in Iloilo, and honestly, fair.<\/p>\n\n\n\n

It comes from La Paz, one of Iloilo City’s districts, and a bowl usually comes with noodles, pork, crushed chicharon<\/em> or crispy pork cracklings, green onions, and a rich broth that does a lot of heavy lifting.<\/p>\n\n\n\n

A good bowl lands on the table steaming. The chicharon<\/em> softens into the broth just enough, then the salt, pork, and crunch all pull together in that very comforting way.<\/p>\n\n\n\n

If you need a place to start, try Popoy’s Batchoy at Central Market. Eating it there feels right in a way that’s hard to overexplain. It’s not overly polished, just the kind of place where people have been sitting down for a bowl for years.<\/p>\n\n\n\n

It’s also the kind of meal I’d want after a long day, when I’m looking for something hot, filling, and very “Iloilo.”<\/p>\n\n\n\n

Make time for Pancit Molo<\/strong><\/h2>\n\n\n\n
\n<\/div>\n<\/div>\n\n\n\n

Pancit Molo is my favorite Iloilo dish.<\/p>\n\n\n\n

The name makes you expect noodles, but the bowl gives you dumplings instead. It’s named after Molo, another historic district of Iloilo City, and usually comes with dumplings filled with pork, chicken, or shrimp in a clear broth.<\/p>\n\n\n\n

I love it because it feels simple at first, then quietly wins you over. The broth is light and flavorful, and the dumplings make it filling without weighing you down.<\/p>\n\n\n\n

It’s still the dish I think about most after every trip.<\/p>\n\n\n\n

For a bowl near the convention area, Kap Ising’s at Atria Park District is an easy choice. Tita Paz is another name people mention for classic Molo-style bowls.<\/p>\n\n\n\n

Still, ask locals too. Pancit Molo is the kind of dish where everyone has a family-approved answer.<\/p>\n\n\n\n

Try Ilonggo sour flavors with KBL and Kansi<\/strong><\/h2>\n\n\n\n

One thing I love about Ilonggo food is how it uses sourness.<\/p>\n\n\n\n

In KBL and Kansi, it wakes up the broth and cuts through the richness. It gives the food brightness without making it feel sharp or tiring to eat.<\/p>\n\n\n\n

KBL stands for kadyos, baboy,<\/em> and langka<\/em>, which means pigeon peas, pork, and jackfruit. It’s often soured with batwan<\/em>, a local fruit that gives the dish its bright, distinctly Ilonggo flavor.<\/p>\n\n\n\n

It’s especially good with rice and a little time to enjoy it.<\/p>\n\n\n\n

Kansi leans heartier. It’s usually made with beef shank, green jackfruit, chili, and batwan. The beef gives it body, while the sourness keeps it from feeling too heavy.<\/p>\n\n\n\n

I’d save either one for a meal when you can sit down properly and let the broth do its thing.<\/p>\n\n\n\n

Say yes to Chicken Inasal<\/strong><\/h2>\n\n\n\n

Chicken inasal is loved across Western Visayas, and Iloilo has its own places worth sitting down for. I still remember my first plate in Iloilo.<\/p>\n\n\n\n

The Iloilo WordPress community brought me to Barrio Inasal after a meetup, and that meal has stayed with me.<\/p>\n\n\n\n

It was so good, I had to apologize to every other inasal place I’d loved before. Dramatic? Yes. Still true? Absolutely.<\/p>\n\n\n\n

Chicken inasal is grilled chicken marinated with calamansi, vinegar, pepper, and annatto. When it’s done well, the skin has a little char, the meat stays juicy, and the smoke carries into every bite.<\/p>\n\n\n\n

What made it even better for me was the sawsawan<\/em>, the dipping sauce you build on the side. Add sinamak<\/em>, an Ilonggo-style spiced vinegar, then a little soy sauce. It cuts through the fat and brings out the smoke from the grill.<\/p>\n\n\n\n

Suddenly, rice feels absolutely necessary<\/em>.<\/p>\n\n\n\n

Eat it with friends if you can. It’s the kind of meal that gets better once the table loosens up and someone says, “Extra rice!”<\/p>\n\n\n\n

Bring home something sweet<\/strong><\/h2>\n\n\n\n

For pasalubong<\/em> (treats you bring home for family and friends), Original Biscocho Haus is an easy classic.<\/p>\n\n\n\n

Biscocho is crisp, buttery, and sweet. Barquillos are thin rolled wafers, so pack them carefully unless you want half of them turning into crumbs before you get home.<\/p>\n\n\n\n

For butterscotch, my personal pick is Rgies. These are chewy, buttery little squares, and Rgies was a local tip I’m very glad I listened to. You’ll see other boxes everywhere, and I’ll never say no to those either. But Rgies tastes richer to me.<\/p>\n\n\n\n

You may need to ask around for it, which honestly makes finding a box feel even better.<\/p>\n\n\n\n

If you spot one, grab a box for home and maybe another for the trip back.<\/p>\n\n\n\n
